In the Kitchen: New Mexico Pie Company


Andrea Schulte from the New Mexico Pie Company joined Chad and Carmelina in the New Mexico Living Kitchen to bake a Chocolate Chess Pie.

Schulte is using bittersweet chocolate, butter, cocoa powder, eggs and granulated sugar, dark brown sugar.

A chess pie is a baked custard pie that usually has a little bit of flour or cornmeal to thicken the filling. However, in order to make the pie “gluten free” Schulte uses tapioca flour.
