Chef Saccocia of High Noon in Old Town grilled up marinated pork tenderloin in the kitchen. The tenderloin was marinated in red chile, agave, smoked paprika, garlic.
The dish will be served with calabacitas and roasted red potatoes.
Chef gets the grill as hot as possible when he places the meat on for cooking, to develop the char to add flavor.
Saccocia will be competing in the Duke it Out Challenge. As for that, he says, “I think it creates some camaraderie, it’s good for networking it’s good for everyone to be on the same team in terms of what we do in presenting it to the public.”
The Duke it Out Challenge is also for a good cause and will benefit El Ranchito de Los Ninos.
