In The Kitchen: Peach Cobbler Pie

It is the best of a pie and cobbler all in one. Andrea Schulte from New Mexico Pie Company was in the New Mexico living kitchen Tuesday with instructions on how to make a peach cobbler pie.

Schulte says simplicity is what makes the pie the best. This peach cobbler pie features local, fresh peaches, cinnamon, ginger and a streusel topping.

One easy way to peel the peaches is to cut a slit in each piece and submerge them in boiling water for about 30 seconds. Then shock the peaches in ice water and the peels will come right off.

You can find delicious treats from New Mexico Pie Company at their bakery, the Downtown Growers Market, Humble Coffee Company, Whispering Bean Coffee Roastery, Epiphany Espresso and Side Track Brewery.
