ALBUQUERQUE (KRQE) – Three friends got together after a trip to Argentina, creating what is now the popular business, Nada but Empanadas. They started out writing an empanada cookbook (which can be found in Amazon), and then turned toward cooking. They sell savory and sweet baked or frozen empanadas and they have monthly cooking classes for all levels.
On KRQE This Morning, the owners made apricot empanadas that are typical for Christmas in Mexico. They made both bite-size and large empanadas filled with brie, cranberries and walnuts.
